The Total Solar Eclipse is coming to Kansas City and team Tappecue is totally prepared. Last week we spent our time testing out the new prototypes for the the Tappecue stand while trying out a new recipe - Chocolate Cherry-Smoked Chicken Thighs.
Interesting enough, the Tappecue stand prototypes were much cooler than the smoker shelf because of the added heat-resistant paint and rubber standoffs. The test went perfectly and you'll soon see the Tappecue Stands available on our website. The chicken also turned out great, perfectly done, and tasty.
The Chicken was resting in Cherry Wine / Chocolate sauce while smoked in the Good-One with cherry wood chips. First we seared the chicken on the stove top in butter and bacon grease, then sauteed onions, carrots, mild chili peppers, allspice and paprika and whisked in the cherry wine, chicken broth, tomato paste and chocolate to make a creamy, delicious sauce for the chicken to soak in while being smoked to temp (165).
